Dukan Diet Pure Protein Turkey Meatloaf Recipe
Meatloaf has always been one of the dishes I can nail. Even my husband, the unanimous head chef in our house, agrees that my meatloaf rocks. Luckily, my status as Turkey Meatloaf Queen has been extended even through Dukan. This recipe is a weekly staple for us, and is a solid Pure Protein dinner. The recipe below feeds two, but halve it or double it as needed.
Ingredients
- 16 oz ground turkey
- 4 tbsp oat bran
- 1/2 c diced onion
- 2 tbsp balsamic vinegar
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 2 eggs or 2 egg white equivalents
- 1/2 c low carb ketchup
- Pinch of ground pepper and salt as desired
Directions
Preheat the oven at 350 degrees. Mix paprika, cayenne pepper, oat bran, pepper and salt in a mixing bowl. Add the ground turkey and onion, and mix well. Add the eggs, balsamic vinegar and ketchup, then mix until the liquids are completely absorbed.
Spray your baking pan if desired, then form one or two loaves. Add a little more ketchup on the top of the loaves if desired then bake for 40-45 minutes (less if loaves are thin, more if you create one, big loaf).
